Healthy Living Summit Recovery Lunch

One of the things that I find funny about the past weekend is that while I was attending the Healthy Living Summit, I was eating some of the most unhealthy food that I've eaten in a while.

Not during the Summit--there were plenty of healthy options for us. But on the 12 hour traffic-jammed drive there, and the hours after the summit festivities ended on Saturday. Then on the 8 hour drive home yesterday.

And last nights' dinner. Oh, cheese pizza! How I love thee.

Today, I decided that a healthy, veggie-filled lunch was necessary.

Today's lunch is brought to you courtesy of a walk to Trader Joe's, and features:

  • A juicy pluot
  • 1/4 of a red pepper
  • TJ's Garlic Hummus
  • 1 Persian cucumber (my first time)
  • Everything Pretzel Chips
  • TJ's Organic Tomato Basil Bisque
  • A lovely basil plant that I bought for $2.99!

I already feel better!
