First of all, I'd like to say that I ran 2 one-mile stints tonight, with a 13.5 mile bike sandwiched in the middle. I experienced absolutely no pain at all. And I wasn't painfully slow either (for me, anyway).
I am going to stick with what I'm doing. A lot of frickin biking, man.
The whole time I was running/biking/running, all I could think about was this...
I don't really know why I was consumed with thoughts of TJ's savory flavor baked tofu while I was sweating profusely, huffing and puffing. It could be the salt. Because this stuff is salty, but it's so good if you're in the mood for marinated tofu.
Another pervasive thought kept busting through my sweat fest: buttered noodles. Oh, buttered noodles!
When I got home, I didn't even bother to take a shower. I mean really. My Gazelle is working tonight, and the dogs and bird could care less if I smell like whatchamacallit.
I dug out the TJ's tofu, whole wheat noodles, steamed string beans (freezer burn is optional), garlic, basil, chili powder and onion powder, and wasted no time getting to work.
Slicing the tofu into thin pieces and sauteing it in a little touch of olive oil before adding the other ingredients made it slightly crispy and gave it a really nice texture.
Wait, wait, wait. Go back up to that picture.
Is that not the most adorable bowl that you've ever seen in your entire life? I got two of those bowls at Homegoods a few weeks ago for $3.99. They had all types of exciting color combinations, but I was on a 'fall' dinnerware kick at the time, and these fed into that obsession. They also come with a vented lid.
The are also microwave, dishwasher, and oven safe. In my world, that's like Christmas, Easter, and Thanksgiving all rolled into one cute little bowl.
What's your favorite way to eat tofu?
On a side note, Letters To My Body is fully, beautifully, and completely up and running! I love the way the site turned out, and I hope all of you have sent in your letters! There is also an option to submit your letter electronically for those who are more comfortable doing it that way. Check it out! I think we can do great things with the Letters To My Body Community!
If you feel so inclined to spread the word, it would really be appreciated. P.S...I have no reservations about sending thank you gifts to those who do this type of good deed (insert evil laugh here)!
