One thing that I consistently talk about with clients and friends alike is that food does not have to be categorized as "good" or "bad". Food, in my opinion, is just food.
Sometimes, you eat vegetables, brown rice, fresh fruit and no refined sugar. That's fantastic, and that's what we should all be doing most of the time.
Sometimes, you eat macaroni & cheese.
It's just the way that life works. The reality is that we should all eat more fresh fruits and vegetables, but we should also be open to the idea of enjoying macaroni & cheese...because food is just food, and no food should ever be put on a 'restricted' list.
The next time that you eat macaroni & cheese, I hope that you'll eat this one, because it's totally worth the macro blast that you'll get from it. It's the perfect recipe for potlucks and parties, since it's not really an 'everyday' type of food.
There are several things that I love about this recipe, but the one thing that puts it over the top is the pasta. Please don’t use elbow noodles. I’ll cry if I hear about it. I promise you that it’s only about 32% as good when you use anything other than cavatappi or cellentani pasta.
